Muffins


225 grams self raising flour
2 ml bicarb of soda
2 ml cinnamon
Pinch of salt
125 grams castor sugar
25 grams butter
2 eggs
250 ml milk
190 grams mixed fruit

Pre-heat oven to 200 degrees
Sift flour, bicarb, cinnamon and salt into bowl
Add sugar and rub butter in gently
Add eggs and milk and beat the mixture
Add fruit to mixture and mix lightly
Fill the muffin pans to two thirds full
Bake for 20 minutes
